An organic Matcha tea yule log? Here is the recipe for 4 people
Ingredients for making the organic matcha powder sponge
- 2 eggs
- 62 g caster sugar
- 62 g flour
- 2 to 3 teaspoons of organic matcha powder.
We naturally recommend our organic Japanese green tea. - ½ teaspoon baking powder
- 1 pinch of salt
To prepare the matcha sponge
Start by separating the egg whites from the yolks into two different mixing bowls. In the first, add a pinch of salt and whisk the egg whites until stiff. In the second, add the caster sugar and whisk the yolks until the mixture turns pale. Fold the egg yolk mixture into the whipped egg whites gently.
In the same mixing bowl, add the flour and matcha powder, sifting well, and mix until the batter is smooth. Then pour it onto a baking tray lined with baking paper. Spread evenly and bake at 150°C for 20 minutes. The matcha sponge is ready.

Ingredients for the frozen mousse
- 2 gelatine leaves
- 150 g cream cheese (such as Philadelphia or St Môret)
- Yellow lemon zest
- 200 ml of 35% fat liquid cream
- 115 g egg yolks
- 1 drop green food colouring
To prepare the frozen mousse
- Start by soaking the gelatine leaves in a bowl of cold water.
- In a mixing bowl, separate the egg whites from the yolks, keeping only the yolks. Then beat them until frothy. In another bowl, melt the white chocolate in a bain-marie until very runny, then pour it into the egg yolks. Whisk the mixture quickly until it forms a ribbon.
- In another mixing bowl, mix the cream cheese with a little lemon zest. Remove the gelatine leaves from the water and heat them in the microwave for a few seconds before mixing them into the cream cheese. Then pour the egg yolk mixture into the cream cheese mixture and mix well.
- Separately, whip the liquid cream into whipped cream, then add the cream cheese mixture. Fold gently, then add 1 drop of green food colouring and mix again.
Assembly
If you wish, place a relief mat into the Yule log mould. Then pour in the mousse, spreading it evenly so that it covers all the edges. Finally, add the matcha sponge, pre-cut to the dimensions of the mould. All that's left is to place the Yule log in the freezer for at least 12 hours.
