What is matcha tea?

In Japan, the Samurai elevated matcha tea through the tea ceremony. Before harvesting, the tea plants from which matcha is made are covered with shade cloths to protect their leaves from light. Thanks to this process, they contain higher levels of chlorophyll and amino acids, giving matcha its jade-green colour and delicate taste.

Discover below the 5 steps to prepare a delicious hot matcha tea:

  1. Pour a little cold water into a bowl.
  2. Add 1 to 2 g of Japanese green tea powder using a chasaku (bamboo spatula).
  3. Whisk everything with a chasen (bamboo whisk) until frothy.
  4. Gradually add hot water (no more than 80°), whisking continuously.

All that remains is to savour your hot matcha with its subtly bitter notes.

Hot matcha tea: original recipes

Matcha latte

Would you like to prepare a more original matcha? We suggest our matcha latte recipe. This very trendy hot drink is enjoyed with a dash of milk, plant-based or otherwise.

  1. In a saucepan, heat half a glass of milk over a low heat.
  2. After a few minutes, pour the hot milk into a cup or bowl.
  3. Add one tablespoon of organic matcha tea.
  4. Mix everything together using a chasen until you obtain a smooth drink.

Treat yourself to a moment of relaxation and enjoy your hot matcha latte.

Matcha hot chocolate

Created by Jean-Paul Hévin, French master chocolatier and pastry chef, this matcha hot chocolate recipe will delight even the most discerning sweet tooth!

It is made with South American chocolate (Venezuela or Colombia) with a low cocoa butter content.

Kusmi reveals the recipe of chef Hévin, who worked at the Peltier house in Japan:

  1. Pour 2 dl of milk into a saucepan and heat it over a low heat.
  2. Add 2 tablespoons of South American cocoa.
  3. Whisk the mixture.
  4. Remove the saucepan from the heat when the mixture comes to the boil.
  5. Continue whisking off the heat to emulsify and aerate the mixture.
  6. Pour the hot chocolate into a cup.
  7. Prepare your matcha tea traditionally in a separate bowl.
  8. Sprinkle a few spoonfuls of matcha over the hot chocolate.
